没看太懂你的问题， 既然已经编译安装完成了，那webserver不是已经是在按照新的php版本来解析php代码的吗？或者你可以直接用phinfo看下版本嘛
不知道楼主的意思是不是用新版本的PHP替换旧版本，如果是的话，直接覆盖旧版本的文件
不用覆盖旧文件，新编译的肯定是在全新的目录下，只需要在apache里加载新的mod，关于如何使用新的mod

编译PHP时会生成新的libphp5.so。具体见：https://segmentfault.com/q/1010000000531561
应该是编译时加上 '--with-apxs2=/usr/local/apache/bin/apxs' 后边是你的apache地址, 会自动生成新的libphp5(7).so， 或者拷贝安装文件里的libphp.so到apache的modules目录下，修改httpd.conf增加loadmodule php5(7)module libphp5(7).so。
编译的时候指定一个目录把所有的文件放在一个目录中，需要用新版本的时候把这个目录删除了就行了，或者新编译的时候把目录指定为旧php的目录，直接覆盖就行了。
php环境搭建好了之后，只需要把Web程序放到 apache 指定的DocuemtRoot的目录下就可以的
把项目放到新安装的php的文档根目录下运行就可以了
启动新编译的php cgi，fastcgi配置为新php的，就可以让你的web用新的
