Most fights in Dragon Quest 3 Remake are easy enough, provided you stay within the areas that your party is properly leveled and equipped for. But while that's the case most of the time, sometimes you're going to need to get everything you can out of the characters in your party.
Ensuring your characters in the party are the right personality is going to make a big difference in their performance, especially the higher level they Achieve. Personality types affect how fast each stat progresses when characters level up, and having the wrong personality can make a character significantly less effective.
The Best Personalities For A Warrior
A Warrior's first priority has to be staying alive; they're there to take the brunt of punishment for their team, especially once they get some of their later abilities that, in essence, allow them to draw aggro from enemies.
Because of this, personalities that prioritize Resilience and Stamina are going to be important, as they make the Warrior more difficult to kill. Aside from that, Warriors are going to be dealing physical damage, making Strength a stat that can significantly increase their damage output.

A Priest is an entirely support-oriented character, and accomplishes this in a couple of different ways. Firstly, a Priest is there to keep allies alive by healing them. The Best Personalities For A Gadabout
The Gadabout does not particularly have its own role; primarily, the idea of this class is to simply not get in the way. A Gadabout does not always do what they're intended to do every turn, and can do their own thing, instead.
But, once a Gadabout hits level 20, they can transition into being a Sage. And so, for the most part, it would be best to gain a personality that's already good for a Sage.
When a Gadabout transitions into being a Sage, their stats are halved. But, that means the stat ratio stays the same, meaning already having a good supply of Wisdom is going to give them a great head start.

The big draw of a Merchant is the extra gold you get at the end of every fight. In terms of performance, they don't bring anything particularly special to the table.

Primarily, you should be focusing on getting their damage as high as it can get, and ensuring they can survive a couple of hits.

Because of this, gaining a higher critical attack chance is going to severely increase their damage output, because of how many enemies they hit at the same time, rolling those odds more often.

In this case, it would be best to grab a personality that stacks one of those attributes, like Genius or Idealist, and give your Hero seeds of whatever the opposite stat is, to round out the other attribute.
