镜像源切换的本质是修改 Git 远程地址
Homebrew 的 brew update 实际执行的是对几个关键 Git 仓库的 git pull：

关键提醒：别混淆“源地址”和“bottle 域名”
很多人只改了 core 和 cask 的 Git 地址，却忘了设置 HOMEBREW_BOTTLE_DOMAIN。结果 brew update 很快，但 brew install node 下载 bottle 时仍卡在 GitHub。务必四者同步：
